Pancake Day

Further to my last, slightly depressing post I thought I would show you our pancakes.  Exciting for me as I haven't made them in over a decade.

I got a bee in my bonnet that I wanted to make them yesterday.

I made a mad dash into Waitrose to get all of the ingredients.  Not as extravagant as it sounds as everything pancake related was on special offer.

I made all of them the full size of the pan and then folded them into corner quarters.

My favourite topping by far is lemon juice and sugar.

As you can see I let Aaron play with a bowl of flour.  It worked for he and I until the grinch that is Daddy came along (details in my last, slightly depressing, post).

Here's our collage.  I whisked it all in my small Vitamix jug.  Whisking on high meant that the pancakes were lovely and light and airy.  Worked way better than trying to beat the hell out of the batter - the bit I have always traditionally hated due to the fear of the batter going lumpy.

I tried to toss them, but for the life of me, could not do it, so ended up using an egg turner to turn them over each time.
